Ingredients

shallot, finely diced

½

clove

garlic, finely chopped

star anise

olive oil

red cabbage

chicken stock

 

 

salt and pepper

tsp

red wine vinegar

1

 

apple, Granny Smith

Preparation method

  • Fry the shallot, garlic and star anise in the olive oil and sprinkle with sugar.
  • Add the red cabbage, deglaze with the chicken stock and bring to the boil.
  • When all ingredients are fully cooked, remove the star anise.
  • Purée the soup and finish with salt, pepper and the red wine vinegar.
  • Finely dice the apple (brunoise) as a garnish for the soup.

Serving suggestions

  • As a soup, e.g. garnished with sour cream and Atsina cress.
  • As an amuse-bouche, e.g. with a topping of apple espuma.
