Ingredients

Preparation method

  • Roughly dice the shallot and the apple.
  • Seal all the ingredients, except for the oil, pepper and salt in a vacuum bag.
  • Pull vacuum and allow to infuse for 4 hours.
  • Blend until smooth and pass through a sieve.
  • Measure 600g of the mixture.
  • Add the mild olive oil to the mixture in a thin stream, as you would when preparing mayonnaise.
  • Season to taste as desired with icing sugar, salt and pepper.

Serving suggestions

  • This multifunctional dressing goes well with many types of salad.
  • Goes well with smoked chicken, turkey and duck breast.
