In China the process of preparing bacon has been elevated to an art form. With only three ingredients, this is one of the simplest methods but the result is simply bursting with flavour and has a brilliantly crunchy texture.

Preparation method

  • Season the bacon generously with the salt and the five-spice mix and cover with plastic foil or seal in a vacuum bag.
  • Set aside to marinate for at least 4 hours.
  • Put the bacon in a metal baking dish in an oven set to 240°C and roast for 15 minutes.
  • Reduce the temperature to 200°C and cook the bacon until tender.

Serving suggestions

  • In a sandwich, e.g. with coleslaw and pickled cucumber.
  • Cut into pieces and serve as a snack with a soy sauce and chilli dip.
  • Use in a composition with components of paprika, zucchini and rice.
