The roasted leek gives the oil a deep flavour, creating a lovely basic oil.

Preparation method
- Cut the leek into four large pieces and roast the pieces in an oven at 220 °C for 25 minutes until it has a lovely dark colour.
- Heat the grapeseed oil to 82 °C.
- Finely mix the leek with the hot oil and salt in a blender for approx. three minutes.
- Decant the oil and pass through a fine-meshed sieve.
Serving suggestions
- Use as a basic oil.
- Delicious when used for confit recipes.
- As a basic ingredient for a leek mayonnaise.
