Preparation method

  • Cut the leek into four large pieces and roast the pieces in an oven at 220 °C for 25 minutes until it has a lovely dark colour.
  • Heat the grapeseed oil to 82 °C.
  • Finely mix the leek with the hot oil and salt in a blender for approx. three minutes.
  • Decant the oil and pass through a fine-meshed sieve. 

Serving suggestions

  • Use as a basic oil.
  • Delicious when used for confit recipes.
  • As a basic ingredient for a leek mayonnaise.
