A very simple preparation method that delivers a beautifully crispy result without the oily texture of traditionally fried herbs.

Preparation method

  • Stretch a sheet of cling film across a plate.
  • Coat with a thin layer of olive oil and place the rocket on top. Make sure that the leaves do not touch one another. 
  • Cook in the microwave for approximately one minute at 1000 W.
  • The rocket will now be nice and crispy but still a brilliant shade of green.
  • Season to taste with salt. 

Serving suggestions

  • As crunchy crisps to accompany a starter or main course with rocket.
  • In a composition with components of sweet pepper, walnuts, and rice.
  • In a composition with components of aubergine, pasta, and onion.
