Preparation method
- Mix together the egg yolk with the rocket, mustard, vinegar, and a little salt in a blender until smooth.
- Add the oil drop by drop while mixing continuously.
- Season to taste with salt.
Serving suggestions
- As part of a cold starter.
- As a sauce for snacks made of or with rocket.
- As part of an amuse-bouche with rocket and nuts.
