As needed:

Preparation method

  • Mix together the egg yolk with the rocket, mustard, vinegar, and a little salt in a blender until smooth.
  • Add the oil drop by drop while mixing continuously.
  • Season to taste with salt. 

Serving suggestions

  • As part of a cold starter.
  • As a sauce for snacks made of or with rocket.
  • As part of an amuse-bouche with rocket and nuts.
