As needed:

Preparation method

  • Push the warm potato purée through a sieve.
  • Place the cream and butter in a pan and heat until the butter is melted.
  • Place the rocket and buttermilk in a blender and create a smooth mixture.
  • Use a spatula to stir the warm cream mixture into the mashed potato.
  • Now add the rocket mixture to the mashed potatoes. 
  • Season to taste with salt and pepper.

Serving suggestions

  • As a side dish for game.
  • As part of a composition with components of fennel, rocket, halibut, or nuts.
  • As part of a composition with components of venison, leeks, spinach, and onion.
