Preparation method

  • Use a vegetable peeler to slice thin ribbons from the thin side of the runner bean.
  • Braise the ribbons in butter and season with salt and pepper.
  • Use kitchen tongs to twist the ribbons into tight rolls.

Serving suggestions

  • As a component in a composition with scallops, cauliflower, and hazelnut.
  • As a component in a composition with steamed potato, beurre noisette, celeriac, and veal cheeks.
