rye sourdough bread

g

clarified butter

As needed:

Preparation method

  • Pulse the rye sourdough bread in a food processor to a crumble.
  • Melt the clarified butter and fry the crumble until nice and crisp.
  • Drain the crumble on kitchen towel.
  • Season the crumble to taste with salt.

Serving suggestions

  • Use a beurre noisette for an even richer flavour.
  • Use this crumble as a basis for other crumbles.
  • Use in a composition with components of scallops, Brussels sprouts, and thyme.
