As simple as this sauce is, like nước chấm it is an essential sauce in Vietnamese cuisine. Everything revolves around the proportions of the sauce; for a tangier sauce you add more lime, and for a spicier variant you add more pepper. The salt enhances the flavour of the dish.

limes, juiced

Preparation method

  • Mix the salt, pepper, and lime juice together.
  • Taste and then add more of one of the ingredients to taste if desired. 

Serving suggestions

  • As a dip sauce for fish, shellfish and crustaceans, poultry, or meat.
  • Add extra lime zest or spice up the sauce by adding a finely-chopped chilli pepper.
