Salted lemon dressing

Salted lemons have an incredible and complex flavour and are perfect to use for seasoning dishes. In this recipe we use the salted lemons to make a dressing.

Ingredients

juice of salted lemon

honey

lemon juice

clove 

garlic

sushi vinegar 

litre 

sunflower oil

ml 

olive oil

Preparation method

  • Put all the ingredients, except the oil, in a blender and blend until smooth. 
  • Add the oil drop by drop. 

Serving suggestions

  • As a component in a composition with oysters, soya, and nori. 
  • As a component in a composition with aubergine, artichoke, raisins, and couscous.
