Unique Binder

Preparation method

  • Mix the passion fruit coulis, sugar water, and the agar agar and bring it to the boil. Boil for one minute.
  • Pour into a dish and refrigerate until completely set.
  • Place in a blender with the Unique Bind and blend together.
  • Keep in the refrigerator in a piping bag until needed.

Serving suggestions

  • As part of a cold amuse-bouche or cold starter with fish, crustaceans, or shellfish.
  • As part of a dessert with components of coconut, ginger, kiwi, lime, mango, nuts, pineapple, banana, grapes, and dark and white chocolate.
