Savoury ice cream

This ice cream is made with a savoury basic ingredient. Substitute the ingredient as you wish to give the recipe a twist of your own. Adding herbs and spices will give the ice cream panache.

Preparation method

  • Boil the mushrooms in the milk with any other flavourings, if desired, until done.
  • Blend (cutter) in the food processor until smooth and pass through a fine conical sieve.
  • Heat the mixture with the egg yolk to 80°C.
  • Once the mixture has reached a temperature of 45°C, add the cream and season to taste.
  • Set aside to ripen for 8 hours and churn into ice cream.

Serving suggestions

  • As a component of a starter or an entremets course.
