In this recipe, kale is used to create a savoury wafer that makes an ideal garnish for a starter or amuse-bouche.

Preparation method

  • Melt the butter.
  • Mix the flour, egg white, vinegar, salt, and chlorophyll with a whisk until smooth.
  • Mix the butter into the mixture.
  • Use a pallet knife to spread the mixture over a silicone sheet.
  • Bake the tuiles in an oven at 120°C for 30 minutes.

Serving suggestions

  • Serve as a garnish with a savoury amuse-bouche or starter.
  • Delicious with tartare.
  • Delicious with earthy flavours.
