Preparation method

  • Skin the plums after immersing them in boiling water.
  • Halve them, remove the stones, and dice into a coarse brunoise.
  • Finely chop the rosemary.
  • Finely chop the red onion and fry with the rosemary in the oil.
  • Add the plums and fry briefly.
  • Deglaze by adding the red wine vinegar and allow to evaporate and reduce slightly for five minutes.
  • Season to taste with freshly-ground salt and black pepper.

Serving suggestions

  • Perfect with poultry, asparagus and potato.
  • As part of an amuse bouche with sea bass, red seaweed and citrus.
  • As a friandise or a as a component in a dessert.
