Scallop beard bouillon

This is a true waste to taste component. Although the beards are often discarded, they actually contain a lot of flavour. You can use them to make a delicious bouillon with a little white wine and water. Adjust the amounts in the recipe to the number of beards you have left.

Preparation method

  • For this recipe, use the beards left over after cleaning scallops.
  • Leave the beards immersed in cold water for at least ten minutes.
  • Put them in a pan with water, white wine, and salt.
  • Allow to infuse for half an hour before straining the mixture through a passing cloth.

Serving suggestions

  • Use as a basic ingredient in a soup, sauce, or jelly.
