Scallop beard bouillon
This is a true Waste to Taste component. Although the beards are often discarded, they actually contain a lot of flavour. You can use them to make a delicious bouillon with a little white wine and water. Adjust the amounts in the recipe to the number of beards you have left.

Preparation method
- For this recipe, use the beards left over after cleaning scallops.
- Leave the beards immersed in cold water for at least ten minutes.
- Put them in a pan with water, white wine, and salt.
- Allow to infuse for half an hour before straining the mixture through a passing cloth.
Serving suggestions
- Use as a basic ingredient in a soup, sauce, or jelly.
