Preparation method

  • Open the shells and remove the nut (white meat). Use this for another dish.
  • Remove the beard and coral from the shell and place in cold water for ten minutes.
  • Pat the coral dry and mix with the soft butter.
  • Season to taste with salt, pepper, and cognac.
  • Use plastic film or greaseproof paper to shape the butter into a roll and place in the refrigerator to firm up.

Serving suggestions

  • Ideal for binding soups or sauces or
  • as bread spread.
