Ingredients

As needed:

 

scallops

 

 

salt and pepper

 

 

olive oil

Preparation method

  • Open the shells and remove the beard, coral, and stomach, but leave the nut (white flesh) attached.
  • Rinse carefully under cold running water.
  • Pat dry and season with salt and pepper.
  • Rub with a little olive oil.
  • Grill the scallops flesh-side down on the grill or Big Green Egg.

Serving suggestions

  • Serve as part of a composition with apple, watercress, and bacon bits,
  • as part of a composition with asparagus, butter sauce, and lime, or
  • as part of a composition with fennel, orange, and rosemary.
