Ingredients

peanut oil

sea lettuce (ulva lactuca)

50

g

spinach

 

Preparation method

  • Rinse the sea lettuce in cold water.
  • Wash the spinach and blanch in boiling water for a few seconds.
  • Immediately cool in iced water.
  • Squeeze the water from the spinach and the sea lettuce, roughly chop, and then blend together with the oil.
  • When the oil has been finely blended, strain it through a coffee filter.

Serving suggestions

  • As a flavour enhancer.
  • As a basis for a dressing or a mayonnaise.
  • As a decorative finishing touch for starters, entremets, or soups.
