Preparation method

  • Pull vacuum the oil and the seaweed.
  • Heat in a hot water bath or Roner at precisely 60°C for four hours.
  • Allow to cool down in the bag.

Serving suggestions

  • As a basic ingredient for mayonnaises, such as a seaweed mayonnaise with salted preserved lemon.
  • As a basic ingredient for a dressing with seaweed mustard and tarragon vinegar.
  • Use it to mount a Hollandaise sauce for a rich and salty flavour.
