This preparation resembles the drying of tomatoes and results in a more concentrated flavour. An ideal preparation for use in a cake. It also gives the plum a firmer structure.

Preparation method

  • Cut the plums in half and remove the stones.
  • Dry in a drying oven at 60°C for 4 hours.

Serving suggestions

  • As a garnish in a composition with foie gras and almond.
  • As a basis for plum tempura.
  • Season with olive oil and mature sherry vinegar and serve in a salad.
