Preparation method

  • Soak the gelatin in cold water.
  • Slice open the vanilla pod and scrape out the seeds. Add the seeds and the pod to the milk.
  • Bring the milk to the boil together with the sugar and semolina and add a pinch of salt.
  • Boil for five minutes and remove the vanilla pod.
  • Add the gelatin to the warm milk and stir until it has dissolved completely.
  • Set the mixture aside to cool. Once it has cooled down add the whipped cream.
  • Divide the semolina between rinsed and still wet pudding moulds and place in the refrigerator to set for at least eight hours.

Serving suggestions

  • Variation tip: add some coarsely ground almonds when adding the whipped cream to the semolina.
  • As part of a dessert with components of fresh red fruits.
