Preparation method

  • Adjust the settings of your mandolin to the thinnest setting at which you can possibly slice a mushroom.
  • Slice the mushrooms just before you need them and dress with a bit of oil, salt, and pepper if you like.

Serving suggestions

  • Substitute the neutral oil with a flavoured one, such as olive oil, herb oil, or sesame oil.
  • Delicious in a composition with components of potato, leek, or quail’s egg.
  • A great match with truffle, pecan nuts, and Parmesan cheese.
  • Use in a composition with components of duck, rice, and porcini mushroom.
