flank steak



sweet peppers, three different colours



mushrooms, very small kept whole



cocktail onions



chorizo, cubed



red onion



herb butter

Preparation method

  • Trim the flank steak and cut into cubes.
  • Cut the sweet pepper and red onion into cubes.
  • Braise the mushrooms in some butter and white wine but don't allow them to brown.
  • Peel the cocktail onions, blanche and braise in a little butter, sugar, and water.
  • Arrange the steak, vegetables, and chorizo onto the skewers.
  • Rub the skewers with olive oil and season with salt and pepper.
  • Cook on the grill.
  • Serve with the herb butter. 

Serving suggestions

  • With a baked potato, corn on the cob, garlic mayonnaise, and barbecue sauce.
  • As part of a barbecue.
