Preparation method

  • Cold smoke the butter.
  • Beat the butter and mix in the sea salt.
  • Roll the butter in plastic film or spoon into a mould or piping bag and store in the refrigerator. 

Serving suggestions

  • For braising fish such as sole.
  • As a garnish or sauce on pan-fried meat or fish.
  • For braising vegetables such as leeks or celeriac.
