Preparation method

  • Separate the eggs.
  • Put the yolks in the bowl of oil.
  • Preheat a smoker to 80°C and fill with smoke. 
  • Put this bowl in a warm food smoker and smoke the egg for 10 minutes. 
  • Ensure that it is not left in the smoker too long, otherwise the yolks will become leathery.
  • Check to see if the egg yolks are done and, if so, take out of the bowl.

Serving suggestions

  • As part of a starter or main course, e.g. with pigeon, red beet, conical cabbage, puffed quinoa and mushrooms.
  • As part of a salad, e.g. with confit de canard, tomato and sourdough bread.
