Preparation method

  • Cut the mushrooms in half.
  • Cold smoke on oak for fifteen minutes.
  • Fry the mushrooms in oil until golden brown and done.
  • Add a knob of butter, remove the pan from the heat, and leave it to briefly rest.
  • Season to taste with salt.

Serving suggestions

  • As part of a composition with components of celeriac, parsnip, or leek.
  • As a main component in a vegetarian main course with asparagus.
