Preparation method

  • Render the smoked bacon in the pan. Deglaze the pan with the milk and whipping cream and leave to infuse.
  • Pass the basis for the froth through a sieve, transfer to a siphon, and aerate with two cartridges.
  • Keep the siphon in a bain-marie until use.
  • Add the froth to the composition just before serving. 

Serving suggestions

  • As a finishing for soups, such as a modern version of a pea soup, pumpkin soup, celeriac soup, or potato soup.
  • As a finishing touch to a starter or entremets.
