Ingredients

egg yolks

white wine vinegar

tsp

Dijon mustard

sunflower oil

smoked mushrooms

 

 

salt and pepper

 

 

lemon, zest

Preparation method

  • Put the egg yolks in a blender together with the vinegar, mustard and mushrooms, and blend until smooth.
  • Slowly add the oil while the blender is on until you have a thick cream.
  • Season with salt and pepper and the lemon zest.

Serving suggestions

  • Serve as a dip for mushroom or vegetable crisps.
  • As a sauce to go with a starter of game and poultry.
