Ingredients

shallots

cloves

garlic

As needed:

 

roasted almonds

As needed:

 

hazelnut oil

As needed:

 

salt and pepper

Preparation method

  • Roughly chop the mushrooms.
  • Finely chop the shallots and garlic.
  • Gently fry the shallots and garlic in oil.
  • Add the mushrooms and sauté until done.
  • Set to cool and cold smoke.
  • Put in a food processor and blend, seasoning with roasted almonds, hazelnut oil, hazelnuts, salt and pepper.

Serving suggestions

  • Use in a dish with components of halibut, green cabbage, and turnip.
  • Use in a dish with components of dry-cured ham, white cabbage, and puff pastry.
  • Use in a dish with components of beetroot, pomegranate, horseradish, and yoghurt.
