Preparation method

  • Peel the cherry tomatoes.
  • Dry them between two cloths, so that the smoke can attach better to the tomatoes.
  • Cold smoke the cherry tomatoes with the cherry wood woodchips. 

Serving suggestions

  • As a garnish for a carpaccio.
  • As a component in a salade Niçoise. 
  • As a component in an en papillote preparation with tarragon.
