Preparation method

  • Set the temperature of the barbecue to 250°C.
  • Remove the peel from the watermelon.
  • Cut the watermelon into thick slices.
  • Grill on the barbecue for 2 minutes on each side.
  • Blend the grilled watermelon slices into a juice.
  • Combine the juice with sugar water until the mixture reaches 17°B (Baumé).
  • Churn a sorbet from the liquid.

Serving suggestions

  • With a cold crab salad.
  • As a component in a dessert, e.g. alongside citrus fruit, chocolate, or mango components.
