This mayonnaise is made with soy sauce to create a savoury flavour. Delicious with pan-fried fish.

Ingredients

soy sauce

egg yolks

soya bean oil

mustard powder

Uchibori rice vinegar

olive oil

sesame oil

Preparation method

  • Put the soy sauce in a pan and cook until it is reduced by half and then leave to cool.
  • In the meantime, use the other ingredients to make a mayonnaise.
  • Lastly, mix in the cooled soy sauce.
  • Store in the refrigerator for two to four days.

Serving suggestions

  • Delicious with pan-fried or deep-fried fish.
  • A lovely accompaniment to crudités, such as cucumber or radish.
  • Use in a composition with components of salmon, chicory, and fennel.
  • Serve with roasted pumpkin or sweet potatoes and halibut,
