Ingredients

Japanese soya sauce

rice vinegar

Indonesian sweet soya sauce (kecap manis)

Preparation method

  • Combine all the ingredients in a pan and heat to 80°C.
  • Allow the spices to infuse for half an hour.
  • Store the spiced liquid in the refrigerator until needed. 

Serving suggestions

  • As a poaching liquid for fillet of venison.
  • As a poaching liquid for spareribs or chicken.
