Preparation method

  • Combine all the ingredients and bring to the boil.
  • Select spices that are in keeping with the desired result.
  • Allow to cool and store chilled. 

Serving suggestions

  • Try the following spices: bay leaf, cloves, star anise, peppercorns, cardamom, cinnamon, and lime leaves.
  • To dress beetroot, red cabbage, or fennel.
  • For preserving shiitake mushrooms, cocktail onions, or unripe pears.
