This method of preparation, in which the fillets are brined just before serving, is the perfect match for the delicate trout. The flavour of the anise adds a refreshing note to the trout.

Preparation method

  • Cut the fillets from the trout and remove the bones.
  • Cut the meat neatly from the skin.
  • Blend the spices together into a powder and then mix in the salt.
  • Sprinkle the powder generously over the trout fillets and, if necessary, season with extra salt.
  • Serve the trout fillets immediately.

Serving suggestions

  • Delicious with components of kohlrabi, hibiscus, and shallot.
  • Combines well with tarragon, crème fraîche, and pine nuts.
  • Especially tasty with caviar, chives, and olive oil.
