red chilli pepper

aged balsamic vinegar

Preparation method

  • Finely dice the mango and red onion (brunoise).
  • Chop the chilli pepper as finely as possible.
  • Cut the coriander into fine ribbons (chiffonade).
  • Combine the chopped ingredients with the balsamic vinegar and lemon juice.

Serving suggestions

  • As a side dish to a main, such as with glazed pork belly and noodles.
  • As a component in an amuse-bouche, e.g. with avocado.
