A rich and spicy dressing with enough acids. This dressing is a perfect counterpart to fatty components.

Ingredients

kaffir lime leaves

palm sugar

tamarind purée

soy sauce

tbsp

fish sauce

ml

lime juice

Preparation method

  • Pound the chillies, garlic, and the kaffir lime leaves in a mortar with a pestle until it forms a paste.
  • Add the palm sugar and mix well.
  • Place in a bowl and add all the other ingredients.
  • Mix well until the flavour is tangy and 'alive'.

Serving suggestions

  • Use in a dish with components of pork belly, sesame seeds, and chili pepper.
  • Use in a dish with components of beef, peanut, and Thai basil.
  • Use in a dish with components of tuna, aubergine, and ginger.
