Preparation method

  • Beat the butter in a planetary mixer with a wire whisk until creamy.
  • Add the caster sugar, salt, lemon zest and egg and whisk into a light and fluffy mixture.
  • Add the flour and briefly mix to create a dough.
  • Pipe into the desired shape and bake at 170°C for 20 minutes.

Serving suggestions

  • To serve with tea or coffee.
  • As a crispy component in a dessert.
  • Vary by dipping half the cookie in chocolate and letting it harden.
