A delicious preparation of squid that looks raw but actually has been subtly cooked.

Preparation method
- Clean the squid as described in the basic preparation.
- Cut the squid open along the length, rinse under cold water, and scrub thoroughly clean.
- Sprinkle generously with coarse salt and brine for one hour.
- Rinse with cold water and pat dry with a dishcloth.
- Pull vacuum and place in a warm water bath for two hours at 60°C.
- Cool immediately in iced water.
- Cut the squid into thin slices and trim the edges.
- Season to taste with lime juice.
Serving suggestions
- Delicious in a dish with components of cucumber, soya sauce, and lime.
- Combines well with coriander, shallot, and jalapeño.
- Perfect served with tomato, rice, and saffron.
