Preparation method

  • Clean the squid as described in the basic preparation.
  • Cut the squid open along the length, rinse under cold water, and scrub thoroughly clean.
  • Sprinkle generously with coarse salt and brine for one hour.
  • Rinse with cold water and pat dry with a dishcloth.
  • Pull vacuum and place in a warm water bath for two hours at 60°C.
  • Cool immediately in iced water.
  • Cut the squid into thin slices and trim the edges.
  • Season to taste with lime juice.

Serving suggestions

  • Delicious in a dish with components of cucumber, soya sauce, and lime.
  • Combines well with coriander, shallot, and jalapeño.
  • Perfect served with tomato, rice, and saffron.
