Preparation method

  • Gently fry the blade cubes in the olive oil.
  • Add the mushrooms, garlic, and red onion.
  • Deglaze with the Guinness, add the rest of the ingredients, and then slowly stew until tender.
  • Mix the flour with the cubes of butter and the salt, add the water, and knead into a smooth dough. Leave to rest for 30 minutes.
  • Roll out the dough and bake blind in the moulds at 180°C.
  • Fill the moulds with the cold stewed meat and cover with the puff pastry.
  • Brush with the beaten egg yolk and bake at 180°C with 10% steam for 25 minutes.

Serving suggestions

  • Serve with a fresh salad.
  • Serve with grilled and marinated vegetables.
