Ingredients

head of broccoli, florets only

1

tbsp

green tea salt

1

tbsp

samphire salt, dried samphire

Preparation method

  • Cut the florets from the broccoli stalk.
  • Steam the broccoli until tender.
  • Crush the salt in a mortar with the dried samphire.
  • Pass through a sieve and sprinkle over the broccoli.

Serving suggestions

  • As a vegetable garnish, e.g. with fillet of hake, mussels or langoustines.
  • As a component in a composition with mushrooms, soy, seaweed, garlic or potato.
