Preparation method

  • Remove the outer leaves of the little gem lettuces and keep these for a different preparation.
  • Heat the chicken stock on medium heat in a pan. Place the little gem lettuces in the warm chicken stock and cover the pan.
  • Take the lid from the pan after about three minutes once the little gem lettuces are halfway cooked and turn the heat to high.
  • Add the butter and swirl the pan, so that the butter creates an emulsion with the cooking liquid.
  • Cook the little gem lettuces for another two minutes.
  • Drain the cooked gem lettuces on kitchen towel and season to taste with salt.

Serving suggestions

  • Delicious in a composition with components of pork cheeks, cucumber, and Padrón peppers.
  • Combines well with cod, fennel, and tarragon.
  • Perfect in a composition with components of pumpkin, sunflower seeds, and roses.
