Ingredients

lemongrass

Preparation method

  • Remove the skin on both sides of the sole or ask the fishmonger to do this for you. Remove the head.
  • Season the sole with salt and pepper.
  • Add the water and herbs together to create an infusion and pour into a steamer.
  • Steam the sole until cooked.

Serving suggestions

  • As a main course with components of sweet potato and pumpkin.
  • As an entremets with an Asian noodle salad and pickled cucumber.
