Preparation method

  • Remove the intestines from the anchovies and rinse the belly cavity thoroughly.
  • Dry the anchovies thoroughly and season with the five-spice powder. Leave to infuse for about ten minutes.
  • Lightly dust the anchovies with flour.
  • Fry in a wok with hot rice oil.
  • Season to taste with salt.

Serving suggestions

  • Serve with stir-fried kale.
  • Serve as a component in a salad.
