Preparation method
- Remove the intestines from the anchovies and rinse the belly cavity thoroughly.
- Dry the anchovies thoroughly and season with the five-spice powder. Leave to infuse for about ten minutes.
- Lightly dust the anchovies with flour.
- Fry in a wok with hot rice oil.
- Season to taste with salt.
Serving suggestions
- Serve with stir-fried kale.
- Serve as a component in a salad.
