Preparation method

  • Clean the squid as described in the basic recipe.
  • Cut the tube (the body) into rings and heat the wok.
  • Add the oil and briefly stir-fry the rings on high heat.
  • Add the spring onion, ginger, and garlic if desired. Sprinkle over a little tsuyu and allow to glaze.
  • Remove the squid from the heat and season to taste with the salt.

Serving suggestions

  • Serve with a miso marinade and lime zest and juice.
  • In a composition with components of couscous, sweet pepper, and green herbs.
  • As a snack with aïoli.
