Ingredients

knuckle

oyster sauce

fresh shiitake mushrooms

ginger, cut into very thin strips (julienne)

spring onion, cut into very thin strips (julienne)

 

 

pak choy, chopped into pieces

corn starch

oil

Preparation method

  • Cut the knuckle into slices around 5mm thick.
  • Make a marinade using two tablespoons oyster sauce, the corn starch, and two tablespoons water. Marinate the knuckle slices in the mixture for at least 15 minutes.
  • Heat two tablespoons oil in a wok on moderately high heat. Fry the beef slices in the oil for three minutes. Remove from the pan and set aside to rest.
  • Heat one tablespoon oil in a pan and stir-fry the onion, pak choy, and ginger until done.
  • Add the beef slices and stir-fry for another two minutes.
  • Add the last tablespoon of oyster sauce to the stir-fry. 

Serving suggestions

  • As a main dish with white rice or noodles.
  • As a lunch dish with a white bread roll.
