Preparation method

  • Place the yoghurt in a tea towel and drain overnight.
  • Take the strained yoghurt from the tea towel.
  • Add the vanilla seeds, icing sugar, and the zest of the lime and lemon.
  • Finely chop the tarragon.
  • Combine all the ingredients and transfer to a piping bag.
  • Store in the refrigerator until use.

Serving suggestions

  • As a component in a composition with red fruit, crumble, and vanilla ice cream.
  • As a component in a composition with orange, almond, and sugar sorbet.
