Strawberry coulis
A sweet broth that is made in a special way. Make sure that the strawberries don't get too hot, as this will evaporate a lot of the aroma.

Makes 300ml.

Ingredients

strawberry |
50 |
g |
sugar |
Preparation method
- Place the strawberries and sugar in a bowl and cover with cling film.
- Place the bowl in a bain-marie or thermal bath and wait until the strawberries start to 'bleed'. This will take around 30 minutes.
- The coulis is now ready. The strawberries can now be discarded as the flavour has been drawn out of them.
Serving suggestions
- As part of a dessert. Can be served with melon, other types of red fruit or a variety of sorbet.
- Use in a composition with components of chocolate, mint, and vanilla.
- Use in a composition with components of avocado, citrus fruit, and tarragon.
