Strawberry rumtopf

An old method of preservation dating from the time when perishable products were preserved at the end of the season to keep them available year-round. This method leaves little of the strawberries but a delicious, sweet liqueur with the flavour of summertime. Contrary to what we are used to, the strawberries must be rinsed before preparing in order for them to keep in the preserve.

Makes 2300ml.

Preparation method

  • Clean the strawberries and rinse them in cold water.
  • Chop into pieces and sprinkle with the sugar.
  • Cover and let stand for 30 minutes.
  • Transfer to a clean preserving jar and add the rum.
  • Will keep for at least 2 months if stored in a cool, dark place.

Serving suggestions

  • As a dessert sauce.
  • As an added flavour in strawberry or raspberry sorbet.
  • Can be varied with other fruits, for example, peaches, cherries or grapes.
  • As part of a cocktail.
